Spice is not what comes to mind with Italian dishes but mention Caribbean and you know there’s spice! 

It's our passion to bring out the spice in Italian cuisine. Southern Italy lays claim to the Calabrian chillis - a medium-hot chilli that packs an impressive 25,000 to 40,000 Scoville heat units. The Scotch bonnet is a staple of Jamaica and used in the majority of dishes in the Caribbean. These are some of the ingredients we're using to create sauces and dishes that are causing a stir in the kitchen, but don't fear if you can't take the heat...it's ok we've got the Italian classics too!!

Our Story

Founders Henry and Licio have taken the traditions of pasta dishes and combined these with Afro Caribbean ingredients and cooking traditions to create these delicious sauces, garnishes and tastes. It's a concept that breaks the rules of traditional Italian recipes, challenges the traditional Italian palette and one that's proving to be an absolute winner with customers.

We've secured seed funding from San Francisco investors that understand the vision and are keen to assist us with growth.

It's no secret the pandemic has made it increasingly difficult for the hospitality sector to find staff. We've decided to work with local young talents and develop them to become the next generation of chefs that understand the Italian way of making food.

We do work in the local community and make regular donations to Gillingham Street Angels

Sustainability

A considerable amount of our authenticity and flavours are achieved because we source from Italian and Afro Caribbean importers. But that's only one part of the pie...we also work with local farmers to source and help us to create our own mince, sausages and other ingredients. The magic and wizardry of recipes' creation takes place at our base in Gillingham.

We're also exploring all forms of food technology and in discussions with Greenwich University to utilise their state of the art Food Innovation Centre to develop plant based ingredients and products that could feature on the menu at a future date!

How we do it

We’ve taken Italian cooking traditions and recipes and reworked these with Afro Caribbean ingredients/flavours to create a new sensation. Our dishes are rich in flavours, colourful and simply tasty. Whether you’re eating a classic bolognese, experimenting with the spicy jerk dishes or enjoying our burgers there’s always a common outcome..that was different, that was exciting, that tasted amazing!
